Whole Food Day 2

Today has been hard as I was back at work. Especially as it was someone’s birthday and there was cake. I was good and resisted and ate grapes instead but grapes aren’t quite cake on a busy Monday afternoon.

I also had to take a small mountain of food with me to work so I had breakfast, lunch, snacks and coconut milk with me. That’s quite heavy on top of my yoga mat and normal work bag. Still I shouldn’t need to take milk in until Wednesday or Thursday and then I’m going to buy it at the supermarket near the office rather than carrying it in.

I’ve generally decided that I’m not that big a fan of coconut milk (milk substitute not the creamy/coconut milk that goes in cooking) in tea. It’s a slightly strange taste not bad but just a bit odd. I really like it in overnight oats, especially as I had it this morning with cinnamon. I might try heating my oats up tomorrow as it’s been quite cold the past few days and I think the extra warmth in the morning would be nice.

Tonight also was my evening that I was at home with no plans so I did quite a bit of preparation for later in the week including making soup and roast vegetables. 

Today I’ve eaten;

Breakfast – overnight oats with blueberries, teaspoon of sunflower seeds and cinnamon.

Lunch – chopped salad with tomato, cucumber, sweetcorn, beans, peppers, carrots and onion. With an olive oil and lemon juice dressing. – very tasty and certainly something that I’ll be making again.

Dinner – turkey steak with sweet potato mash 

Snacks – grapes, raisins and chai tea with coconut milk.
