Clean Eating Update

I’ve been generally keeping up with my eating clean/only eating unprocessed food that doesn’t contain gluten, dairy or sugar, 5.5 days per week. It’s been hard to keep up with it when sharing meals with others but even when I’ve eaten prepared food I’ve tried to keep to it. I had a mezze platter for lunch when out with a friend, so it had hummus, babaganoush, olives, stuffed figleaves, roast vegetables, salad, and freshly baked bread which I did eat a bit of. All very tasty and pretty much on programme.

One thing that I am sticking to is overnight oats for breakfast. I love that I can prepare two days at once (I only have two tubs that are the right size that I use for them) and then just pick them up from the fridge to eat in the morning. I discovered this recipe for Carrot Cake Overnight Oats. It’s basically cake in a jar but much healthier for you. I have vanilla essence that has sugar in it so I’ve been using 1/2 teaspoon of that rather than maple syrup. It’s really good and very filling.

I’m certainly feeling the need to snack much less that I used to.  In the evening I’ve got into the habit of drinking a cup of herbal tea when I want a snack. If I still want something after that then I’ll have some fruit but most of the time I’m fine after some lemon and ginger tea.
